The West Cork Maritime Single Malt Irish Whiskey Virgin Oak Cask Finished Limited Edition is a characterful single malt Irish whiskey from the south of Ireland. It is produced by West Cork Distillers in Skibbereen, County Cork, an independent Irish distillery whose location near the Atlantic coast defines the maritime identity of the series. This single malt is made from malted barley, which, after distillation, is initially matured in oak casks. The whiskey then acquires its distinctive character through a finish in new, previously unused oak casks – virgin oak casks. The intensive contact with fresh oak imparts additional spice, vanilla, and roasted notes to the Irish single malt.

As a limited edition of the West Cork Maritime Collection, this bottling combines traditional Irish whiskey making with a distinctive cask finish. Virgin oak casks differ significantly from those previously used in bourbon or sherry casks, as the distillate interacts directly with the fresh wood and its roasted aromas. This gives the West Cork Virgin Oak Cask Finished Single Malt an additional structure and pronounced wood and spice notes. At 43% ABV and in a 70cl bottle, the bottling remains both approachable and expressive. Color: Warm gold with amber highlights.

Nose: Malty and balanced with vanilla, fresh oak, and subtle roasted notes, accompanied by sweet spices and delicate fruit.

Taste: Smooth and full-bodied with creamy vanilla, malt, and spicy oak, along with fine caramel, roasted, and fruity notes.

Finish: Long and spicy with oak, vanilla, malt, and a dry, lingering roasted aroma.

The West Cork Maritime Virgin Oak Cask Finished is particularly well-suited for enjoying neat at around 18 to 20 °C or with a few drops of still water. The spicy oak and vanilla notes pair well with grilled meats, mature cheddar, roasted nuts, or mildly smoked foods. Desserts with caramel, vanilla, apple, or nuts also complement the influence of the virgin oak casks beautifully.
