The West Cork Maritime Single Malt Irish Whiskey Rum Cask Finished Limited Edition is a single malt Irish whiskey from County Cork that combines classic Irish whiskey character with an additional rum cask finish. This bottling is produced by West Cork Distillers in Skibbereen, in the southwest of Ireland. The independent distillery was founded in 2003 and has grown from relatively small beginnings into an established producer of Irish whiskeys. Malted barley serves as the base for this West Cork single malt. After the initial maturation, the whiskey undergoes a further finishing period in ex-rum casks, the influence of which adds sweeter and fruitier cask notes to the malty base.

The West Cork Maritime Rum Cask Finished belongs to the Maritime Collection, whose name reflects the distillery's close connection to the Atlantic coast of West Cork. The rum cask finish lends the single malt additional facets of tropical fruit, vanilla, and caramelized sweetness without masking the fundamental character of the Irish whiskey. Bottled at 43% ABV in a 0.7-liter bottle, this limited edition offers a well-balanced drinking strength. Taste: Smooth and full-bodied with malt, creamy vanilla, and caramelized sweetness, complemented by tropical fruits and a subtle oak spice.

Finish: Long and harmonious with vanilla, sweet fruit, subtle rum cask notes, and spicy oak.

The West Cork Maritime Rum Cask Finished Single Malt is particularly well-suited for enjoying neat at around 18 to 20 °C (64 to 68 °F). Alternatively, a few drops of still water can be added. It pairs well with grilled pineapple, caramelized banana, roasted nuts, or mild to medium-strength cheeses. Desserts with caramel, vanilla, coconut, or tropical fruits also complement the influences of the rum cask finish.
